Tabletop Temperer vs. DR Tempering Unit
by User 192 - Wednesday, 20 August 2008, 6:13 AM

I have used my ACMC tabletop for several years (and enjoy it) and am looking at purchasing a DR Tempering Unit from Design and Realisation, Inc. What intrigues me about the DR unit is the expandability and the increased volume of chocolate. I do not intend on purchasing the wheel initally, but am wondering if anyone in this forum has any experience using their machines? The DR unit seems to be well built, I am just looking for some potential guidance from individuals who may have experience.

Thanks

Hi,

I have been looking into both Design Realisation and Perfect for tempering machines. Did you end up finding out anything about the DR machines?

Thanks!

Sorry about the late response everyone. The 10kg DR temperer is absolutely wonderful!! It does just over DOUBLE what the ACMC does and does it just as well. Options like the equipment scraper etc can be pricey, but fabricated pretty simply too.

Accuracy is spot on with no +/- variable.

Great Job DR

This is their site.. www.DR.ca

I have a friend who uses DR tempering Unit for some time. I have an ACMC and looking for an upgrade. I inquired about it with him and he had only positives to tell me. I am looking for some more positives before I go for the buy.

Aside from using callets to seed in the DR, MYCRYO is a
quick alternative and it works great.

The chocolate MUST be spot on at either 34 for milk or 35 for dark
when adding it.

Any Pro or Cons comparing with the ACMC?

Thanks,

Does someone have the TF 20, water tempering machine from Dr. Ca ?

I would like to know if that machine is ok ?

I am just beginning my business and want to be sure that this machine is ok ?

Thanks,
