The only thing I wish ACMC would come up with is a way of making peanut clusters, haystacks etc. in their dipper. I have rigged a way of doing this and it works ok. It is kind of crude but it works. I ordered an extra center scrapper, cut a hole in the scrapper about three inches high but start about an inch or so up from the bottom leaving the bottom in (this strengthens the scrapper and also keeps the chocolate and nuts mixed. The way I keep a piece of seed chocolate in the machine is: I drill a small hole in a small piece of chocolate, tie meat twine to the chocolate and the other end to the wing nut post. I then dip the clusters out onto sheets and don't have to worry about digging them out of a bowl. Like I said it is crude but it works great and if you have tried to make clusters in the dipper the normal way you will think this is great.
