At our chocolate business we own a Hilliard?s Compact Coater and have been using it for the last 10 years. I works really well but I have never gotten the same shine and texture that I get when I use the little dipper. Using the same type of chocolate, the coat on the chocolates made on the compact coater are always more matte or dull and present some spots, like buble marks or rings. I have tried everything and even contacted the owners at hilliards who were kind enough to fly down to Mexico in order to helpo us and check the machine, but even after changing some of the older parts and scrapes, they didn?t find the exact cause. Please, if anyone knows how to avoid this types of ring spots on chocolate or has any tips that have worked to guarantee shine when using a coating machine (even one from a different manufacturer) let me know.
