Revolation2 - bubbles problem! grr!

Hi everyone,

I'm new to the forum. Just got my Revolation 2 and have been experimenting with it. I'm having some trouble getting a good temper though. BUBBLES! I'm using callebaut, milk and dark, and in both cases, I've got bubbles. I've tried various temperature schemas, using the recommended and also making my own changes and I can't seem to get rid of them.

The only thing I can think of is that the blade at the bottom of the divider is slightly folder, and raises up off the bottom of the bowl - but this is only slightly, and I can't see why this would affect the agitation or how it might deposit more air in to the chocolate.

I have experience in tabling for tempering so I know what I'm looking for in terms of getting a good temper. I'm starting to wonder if it is something about the structure of the machine. Anyone have else similar problems? Or how to solve it for this machine in particular?

Did you try contacting Chocovision? They are very helpful.
