Hi Angie, I only temper the first batch... Before I run out I add melted chocolate.
For example I would start tempering 4kg, when I reach about 2 kg in the bowl, I start adding meted chocolate at about 35C. I make sure it is not more that 1kg. I add it slowly and waiting for it to
Mix properly. You do not want it too hot otherwise will take the one in the bowl out of temper.
