I just bought a Delta for my start-up and so far I love it.  However, I do seem to go through tempered chocolate very quickly when I'm making my molds. For those of you who are or have used this machine, is there a way to add chocolate while you're working without going through the whole tempering process again?  It would be nice to be able to keep a steady supply of chocolate to keep production going.

Get the holed baffle from chocovision, increases capacity. You can also get the chute for the chocolate.

Hi Angie, I only temper the first batch... Before I run out I add melted chocolate.

For example I would start tempering 4kg, when I reach about 2 kg in the bowl, I start adding meted chocolate at about 35C. I make sure it is not more that 1kg. I add it slowly and waiting for it to
Mix properly. You do not want it too hot otherwise will take the one in the bowl out of temper.
I hope it helps.
