I am considering becoming a chocolatier and one of my questions is, how often do you need to clean a tempering machine? Health and safety is of course a major consideration...

As I understand it, many chocolatiers leave chocolate in the tempering machine overnight and only occasionally have a thorough clean down. Chocolate and water are not a good mix and so I guess it sort of makes sense to clean the machines occasionally...

Looking forward to receiving some feedback on this issue.

Hi Mark, at our store we have 3 machines and they are cleaned ( wiped down ) every night. When we change chocolates in the machine like sugar free, or a different type, that is when we take the pieces apart and thoroughly clean the machine. Andrea, DiAmano Chocolate
