Hi. I bought a Prefamac tempering machine and also would like to know if one let the wheel spin the whole time, because I find that the chocolate later over christalises and get too thick to mould. At the moment I don't do enough chocolate at a time to seed more chocolate to thin it out. Do I just raise the temperature? Some input from the professionals will help. Elizabeth

What is your working chocolate temperature?
