Hi Chris,

I am currently thinking of opening a Simon Dunn Chocolates franchise and I've found these forums quite useful. Ideally, you will need three chocolate machines: one for white, milk and dark chocolate. Once your chocolate has been tempered, you should keep it at 32c. Hope that helps!
