Does anyone know what is a tempering machine is sufficient to start a small chocolate business?
I've never used one so am not sure exactly how it works - after the chocolate is tempered, do you allow it to keep spinning at 32C or do you then pour it into a something like a mole d'art to keep it at 32C?

Anything else that might be useful?

Hi Chris,

I am currently thinking of opening a Simon Dunn Chocolates franchise and I've found these forums quite useful. Ideally, you will need three chocolate machines: one for white, milk and dark chocolate. Once your chocolate has been tempered, you should keep it at 32c. Hope that helps!
